Amazingly easy lime chicken and quinoa (or Cauliflower rice)
The summer (18 months ago) I had a baby, and the best thing we received was some delivered meals from co-workers and friends. One meal really stuck out with my family...all of them which is saying a lot. It was so simple just chicken and quinoa. We tend to eat pretty paleo leaving most of the grain out of our diet, but my 5 year old loves quinoa. It is also easy to make, packed with nutrients like magnesium as well as fiber and protein. In the world of gluten free whole foods diets, it is definitely a winner if you can tolerate grain.
This week I was craving that recipe. I asked my friend and she had no idea where she found it or exactly how she made it. So I went to work in my kitchen. This meal takes about 20 min of meal prep if you are cooking the quinoa, and less if it is already cooked in your fridge.
If you want to keep this low carb use cauliflower rice instead. If you are lucky enough to have a Trader Joe's or a Costco near by you can keep it super easy using the already riced cauliflower. It is frozen at TJ's and fresh at the Costco!

Lime Chicken with Quinoa
1.5 cups cooked quinoa
2 lbs chicken breast or thighs
1 small bunch Cilantro
1 TBS Cumin
2-3 TBS Cooking fat: coconut oil, avocado oil, olive oil
1 tsp Sea Salt
Cook the quinoa per package instructions, if it seems a little under cooked that's ok it will cook more in the oven.
While this is cooking you can:
Mince up the cilantro
Cut chicken breasts into smaller pieces roughly palm size so they make a serving
When quinoa is cooked place all into oiled 9x13 baking dish or work with what you have to bak in.
Mix 1/2 the cilantro into pan with quinoa, and add juice of one lime to the mixture.
Place chicken on top of quinoa.
Sprinkle cumin, lime juice and rest of the cilantro onto chicken.
Put a little liquid oil over top of chicken or cover with foil to keep moist.
Bake on 350 degrees for about 30 min until chicken done through.
